Regency food and list by the month of what was available

Regency food

Food tended to be much on the table at once rather than formalised courses but there were some dishes that were removed; for example a soup or fish dish might be removed with a saddle of mutton and some closed pies, the meat and pies brought in when the soup tureen and fish dish was taken out to make room for more. Sweet dishes might be on the table with the savouries. A remove was not another course and the vegetables and side dishes would remain. As can be seen by the two course meal – a small feast to our eyes – there was no apparent order in which sweet or savoury might be served.

Some meal exemplars given by Mrs Rundell:
First example:
Scrag of veal smothered in onions removed with a fruit pie
Mashed potatoes trimmed with small slices of bacon
Pea soup
Second example:
Half a calf’s head grilled removed with pie or pudding
Tongue and brains
Carrot soup
Bacon with greens round it
Saddle of mutton
Third example including two courses:
First course:
Broiled Salmon removed with chine of pork

Some of the fruit seem a little odd; I can only conclude that the seasons have shifted slightly permitting things to be in season earlier than we should find them today; though I puzzle over how apples appear in every month. Possible a store was supposed to last all summer, though I’d think they’d be pretty wrinkled.
